I lived in Portland for about the first half of 2008, While there I was introduced to a place called The Little Red Bike Cafe. It almost immediately became my absolute favorite place. Before the LRBC, I never knew so much could be done with a fried egg sandwich! Recently Kelly used their recipe to make some fig jam and I thought, "What better way to use their jam than to try and make one of their sandwiches?"... The Alleycat. Ever since I've known Matt Williamson, he's talked about his million dollar idea... "Matt's Meal In A Muffin" (or M.M.M.). Yeah, It's pretty much just what it sounds like. After 5 years of hearing about it I decided to make it a reality...
I thought it turned out fairly well. Next I'll probably try to do a breakfast muffin. I'm thinking Blueberry Pancakes and Sausage (a blueberry muffin with breakfast sausage inside and topped with a maple frosting)
This morning I attempted to make breakfast without having a plan beforehand. I awoke with an insatiable hunger and needed food immediately. All knew I wanted to use up the leftovers from yesterday while also using my recently acquired egg poaching skills. This is what happened...
2 Homemade White Corn Tortillas fried in Sunflower Oil until crispy
...topped with Spanish Rice & Refried Pinto Beans
...then topped with grated Australian Cheddar, 2 dollops of Sour Cream and a Poached Egg with a fried tortilla 'poker'
There's nothing on Earth I love to eat more than rice, beans, and tortillas. Hands down my favorite meal of all time. It's simple deliciousness has sustained whole civilizations for hundreds of years. Rice, beans and corn go together like... well, rice, beans and corn. What's not to love? It was such a beautiful day we decided to eat on the back deck. Could this day get any better?
