It sounds weird but I've been really into boxed rice mixes lately.
The barbeque sauce didn't reduce in the baking dish the way it was supposed to. After the chicken was cooked I put the sauce in a pan and boiled it way down. Once it was reduced, I poured the thick gooey mess over the cooked chicken.
This was my first attempt at cooking chicken. I've sort of avoided chicken since becoming a meat-eater again (about 6 months ago). It just seems to me that if your going to eat an animal, why eat something as neutral in flavor as chicken? Someone once told me that "chicken is the tofu of meat" and I couldn't agree more. Make the animal die for a reason is all I'm sayin'. Beef, lamb, and pork are all more satisfying and have stronger, meatier flavors so that's why it felt weird to be standing at the meat counter asking for chicken. What can I say? I was in an all-American/white trash/comfort food mood. With that said, this meal was unbelievably delicious so don't be surprised to see the occasional chicken rear it's beak in these pages again.
